Your Jr. Chef can make Baked Penne with Butternut-Sage Sauce
Sauté fresh sage, add/simmer cubed winter squash (kabocha or sugar pie pumpkin good here), chopped onion, water and s&p 15-20 min to tender, purée with immersion blender. Cook penne (ww okay) about half way, drain/rinse then add winter squash sauce, cream and cubed salty/melty cheeses (sub a bit of bleu, optional). Transfer mixture to buttered 2-qt baking dish, and bake 10-15 min. Notes: unbaked casserole can be assembled up to 2 days ahead stored/foil-covered in fridge; sauce will keep up to 5 days or frozen up to 3 mo; leftover sauce is a good start for soup. Parental supervision.
