The types of moms everyone swears they’ll never be
 
 
Easy and yummy fresh shrimp dishes
After tossing shelled/cleaned shrimp in oil and citrus zest, season with salt, and spread on a baking sheet. Sprinkle with fresh lemon juice and roast for a few minutes. Finger-lickin’ good.
In a heated, oiled very large skillet, render fat from sliced andouille sausage, then add raw cubed b/s chicken. After meat begins to brown, stir in finely diced onion/celery/bell pepper/garlic and spices, sauté a few minutes, and add 1 28-oz can of plum tomatoes (crushed, with juices), and simmer 10 min more. Add 1 C water, and stir in 10 oz dried pasta. Just before pasta is done, add ¾ lb fresh peeled/deveined shrimp. Garnish with thinly sliced green onion for a hearty 1-pot meal of “pastalaya” (the same flavors of jambalaya).
Marinate large peeled/deveined shrimp in Sriracha, olive oil, Worcestershire sauce, garlic, cilantro, sugar, s&p for 2 – 4 hrs in a 1-gal plastic bag in the fridge. On your heated grill, cook skewered shrimp 2 – 3 min a side. Using a fork, scrape shrimp onto serving platter. Sprinkle with finely chopped cilantro. Comments say b/s chicken cubes can be subbed.
Make a white bean (eggless) “mayo” with canned white beans, lemon juice, Dijon, salt, sweetener, oil, and refrigerate until needed. Combine cooked/peeled/deveined/chopped shrimp, diced celery, sliced green onion, minced parsley, minced dill, pinch cayenne, s&p and white bean “mayo.” Fill sliced croissants with shrimp salad. Enjoy this Scandinavian mainstay! White bean “mayo” might be mixed with horseradish for roast beef or mixed with garlic for an aioli.
