Eggs nested in…
Clouds. Eggs in Clouds. After whipping egg whites until stiff peaks form, fold in extras (shredded cheese, chives, bacon, etc.). Spoon into 4 mounds on a parchment-lined baking sheet or silpat making a deep well in the middle of each. Bake a few min, add a yolk to each, bake 2-3 min more.
Baked Egg Potato Bowls. After baking potatoes, cut a piece off the long way, scrape out however much you want (save for another use), add extras (s&p, opt red pepper flakes, crumbled bacon, sliced green onion, cubed/grated cheeses), top with 1 raw egg, sprinkle with toppings, and bake for 20 min.
Hash Brown Egg Nests. After greasing a 12-cup muffin tin and with fingers press in mixture of thawed frozen shredded hash browns (bake ‘n’ shred ’em if you must)/s&p/cheddar to make nests. Bake 15 min. Crack a med. egg (lg will be too lg), and top with s&p and toppings. Bake 13-16 min. Optional to serve with chilled avocado slices. There’s always using a lg 6-well muffin tin with lg eggs and add’l fillings; bake longer.
Bacon and Spinach Baked Eggs in Bread Bowls. Dinner-sized. After cutting top off and removing insides of 4″ crusty rolls (ww good here), fill with mixture of cooked bacon/diced shallot/fresh spinach/s&p and whisked eggs. Bake 20-25 min.
