Your Jr. Chef can make Easy Chicken Noodle Soup from a Leftover Roasted Chicken
Special culinary technique for more flavor: brown (roast or sauté) the carcass. For basic chicken stock, combine browned carcass with chopped carrot, celery, onion, thyme sprigs, bay leaf and black peppercorns with 12 C water. Cook about 1½ hrs. Strain keeping only stock (okay to refrigerate for 3 days or freeze for 1 mo; a sub is 6 C high-quality, low-sodium store-bought chicken broth.) Cook carrots, celery, onion, thyme, bay leaf, s&p in stock about 20 min, and add cooked noodles and 1½ C bite-sized pieces of chicken from the carcass (before browning). 3-min video. Comment suggests small addition rosemary, pinch of hot pepper flakes, 1 T lemon juice just before serving. Parental supervision.
Then there’s Easy Chicken Noodle Soup using 1 breast, 1 whole leg, diced vegetables, 6 C store-bought broth and instant ramen (or 4 oz any variety dried short pasta cooked).
