Buttermilk-marinated Roast Chicken with Tarragon and Dijon Mustard
The genius here is that this 3½ lb chicken can marinate anywhere from 1 – 3 days, then you’ve got dinner on the table in about 35 minutes! With kitchen shears, after cutting backbone out (save for soup) and nicking connecting joints of legs and wings/breasts, place chicken in doubled lg zipper bag with chopped fresh tarragon, crushed peppercorns, crushed garlic, buttermilk (or non-dairy sub), oil, mustard, grated nutmeg (microplane zester or nutmeg grater) and salt to marinate. Massage and flip the bag over during the day. To cook, brown spatchcocked chicken in lg skillet for 5 min, then transfer skillet to oven for 30 min. Opt: deglaze pan with white wine. Cut chicken into 8 pieces, and serve.
