Seasonal Pears
CULINARY uses:
– Anjou (red and green) – all purpose: raw + heated applications (keeps its shape)
– Bosc – all purpose: raw + heated applications (keeps its shape)
– Comice – raw only; sweet buttery flesh is good on a cheese plate
– Bartletts (green) – good for canning, preserves, syrups, chutneys; as a dried pear; a good substitute for any recipe using apples; in salads and on a cheese plate (aromatic, red and green); makes pear sauce or pear butter
– Seckel – snack-size (best fully ripe), good plate garnish, can be gifted canned whole (“baby-pears” in mason jar with ribbon) and pickled or poached whole
RIPENING:
Pears ripen from the inside out, so “check the neck” for slight movement; refrigerate after “ripe” OR refrigerate to slow ripening. Anjou, Bosc, Comice (don’t be dissuaded by light bruising): ready when area near stem yields slightly. Bartletts (green): gives crunch and tartness when green, is moist and mildly sweet when yellow-green and golden yellow is juicy and sweet.

– Bosc – cinnamon brown with elongated neck
– Comice – small to jumbo, green with red blush to red
