After setting aside browned bone-in short ribs and cooking onion, carrot, celery and diced pancetta to soften, add hearty red wine and canned diced tomatoes to simmer. Add beef back to Dutch oven, cover, and cook covered in oven for 2 – 2½ hours. Notes: add a few sprigs of fresh thyme; up quantity of carrot; add an additional cup of homemade beef stock for more sauce; use short rib bones to make stock (http://food52.com/recipes/21207-rich-roasted-beef-stock); great the next day; fat easy to remove when chilled. Serve with mashed/boiled potatoes or shred meat back into sauce to fold into pasta or heap on soft rolls for sloppy Joes. Serves 6 – 8.

After putting a pinch of lemon zest/minced fresh rosemary/s&p under thigh skin and dredging in seasoned flour, brown each side and roast in the oven (oven-safe skillet).
