Your Young Jr. Chef can bake Blackberry and Peach Buttermilk Cobbler Even preschoolers can help with this recipe. After whisking together maple syrup and cornstarch and gently tossing fresh fruit, melt butter in cake pan in oven. Whisk flour, baking powder and salt, stir in buttermilk just to combine, and pour on top of melted butter (no stirring). Scatter reserved peach mixture over top, and bake. Easy. Yum. Notes: not too sweet; cane sugar-free; aluminum-free baking powder is healthier; recipe can be doubled (may need to add more cornstarch since more fruit brings more liquid); top with sliced almonds or chopped pecans; sprinkle with crunchy topping sugar. Okay subs: white whole wheat flour or whole wheat pastry flour for AP, agave for maple syrup. Consider alt ripe fresh fruit combos: pears, apricots, blueberries, pineapple, cherries, figs, pluots, apples (match cornstarch quantity to “wetness” of fruit).
