Notes: alt wines for Madeira are sherry, sweet vermouth, ruby port, tawny port; alt sweeteners okay, reducing sweeteners okay; opt to add cooked veges, sautéed mushrooms and/or cooked sausage at the end; okay to reduce the butter/oil from 10 T to 7 T; sub part olive oil for butter (taste will be different); pasta choices: pappardelle, egg noodles, tubular pastas; don’t use red onions – they turn grayish/not pretty.
