Baked eggs in hash brown cups Good for feeding a big family at home and for a brunch. Grate baked potatoes or thawed/drained frozen hash browns, press lightly with fingers into 2 cooking-sprayed 12-hole muffin pans to make nests. Bake at 400˚ for 15-20 min. Can do to this point the day before. Comments say then add a spoonful of crumbled cooked bacon or sausage. Crack an egg into each nest, sprinkle s&p, cook about 15 min more. 2-3 minutes before the white is set, sprinkle on grated cheese, optional.
