Your Jr. Chef can make healthy Macaroni & Cheese


After prepping 1/2 head of cauliflower and grating cheddar/Parm, add macaroni (if using alternative pastas, compensate for different cooking times) and cauliflower to boiling water. For sauce, place bowl of grated cheeses and crème fraîche/sour cream on top of cooking pasta; stir to smooth and melty, and add chopped parsley, s&p. Combine cooked macaroni and sauce, and serve, or put under broiler until golden and bubbling. Yummy! and healthier than the ‘box’ (eewww – yellow/orange dyes made from petroleum banned in Europe but not the U.S., and whey is material left in water [like the water in packaged mozzarella balls] from cheese-making).
