Want to tackle shellfish? It’s pretty easy. Starting with dried/soaked chickpeas (aka ceci, garbanzos), make a hearty stew adding carrot/celery/onion/cherry tomatoes. Mussels cook for 3 minutes, are taken off the heat, shucked (meat scooped out from shells), and juices/mussels/chopped parsley stirred into brothy stew. Drizzle a few drops of good olive oil over each pasta bowl. Can sub pearled barley for farro. Grain/legume combo is a complete protein. Recipe is vegan before addition of mussels. Comment says “great meat cookies!” Not inexpensive, but delicious and fun to make. Starting with thawed, flour-dusted, all-butter puff pastry (partially hydrogenated shortening pastry is a no-no), brush surface with tomato sauce, and cover with thinly-sliced prosciutto. Fold pastry, and refrigerate 30 min. Cut roll into 1/2″ slices, bake, flip over and bake some more. Cool and enjoy. What else could you wrap inside? (How about fat asparagus, raw corn kernels, red bell pepper strips… colorful presentation when cut into slices.) The sweet applications are endless: jams, chocolate, nuts, dried fruit. Well, a meatloaf made to look like a carrot cake: 2 layers of meatloaf mix (baked in 9″ round cake pans) separated by mashed potato “frosting,” then “frosted” and decorated by piped mashed potato “frosting” and colorful carrot peel circles (purple frosting from purple carrot peels?).
