Kugel, kugel, kugel!
Lithuanian rice kugel. GF. Buttered cooked rice mixed with egg/sweetener/lemon zest/chopped apples/raisins or dried cranberries then baked to light brown. Notes: vanilla in batter optional, sprinkle top with ground cinnamon optional, (knowing that flavor will be different) okay to sub other fat for butter and (knowing that flavor and texture will be different) sub all or part of white rice for brown rice, use a firm sweet-tart apple variety, egg substitute okay, buttered rice may be made a day ahead.
Mrs. Horvitz’ noodle kugel. Toss cooked egg noodles with mixture of cottage cheese, sour cream, egg, butter, sugar, raisins, cinnamon, and bake. Serve hot, warm or room temp. Notes: no stabilizers/thickeners in dairy ingredients, low-fat dairy ingredients okay, vegan noodle kugel variation available, can be made in muffin tins.
Savory noodle kugel. Blend cooked egg noodles with eggs, sugar, cream cheese, sour cream, cayenne, corn kernels, thawed chopped frozen spinach. Pour into 9×13″ buttered pan, sprinkle with shredded jack, and bake. Cool, slice. Serve at room temp. Can be made ahead.
