After thinly slicing/salting/draining/rinsing/drying 3 large zucchini (from your garden? Consumer Reports likes the Zyliss mandolin; careful – fingers; use also for cucumber/dill salad), combine with arugula, 1/2 C coarsely grated Parmesan or Grana Padano, olive oil, lemon juice and s&p. Tasty now and perfect for hot weather (no cooking!). Alt: yellow zucchini or crookneck squash. Optional: fresh mint, lemon zest. Parental supervision.
