Your Jr. Chef can bake Custardy Apple Squares A clafouti, really, with a nice balance of apple to batter. Lightly adapted from Dorie Greenspan’s Baking Chez Moi. After peeling 3 juicy sweet apples, slice thinly (with or without a mandoline) and fold into a batter of eggs/sugar/salt/vanilla/milk/butter/baking powder/flour. Scrape batter into 8″ square or round buttered baking pan, bake 40-50 min, cool and dust (opt) with confectioners’ (powdered) sugar. Notes: sub pears for all/part sliced apples; choose different kinds of apple; aluminum-free baking powder is healthier; alt flours okay; reduce sweetener by up to half; egg substitute okay; alt milks okay; change all/some extract flavor; to batter, ½-1 tsp citrus zest and/or cinnamon or ⅛ tsp lightly grated nutmeg opt.
