Your Jr. Chef can make Pasta with Grilled Eggplant Sauce


Vegetarian. Slice/salt/rinse/dry/oil eggplants; grill or broil turning once; chop; set aside. In large skillet, sauté onion/garlic, stir in chopped eggplant, and remove from heat. Cook pasta to al dente, reheat veges and mix in chopped ripe plum tomatoes. Mix in pasta, and fold in chopped fresh basil. Season with s&p, and serve with freshly grated Parmesan. Serves 6.
