Fresh, ripe apricots! Seasonal fresh, ripe apricots BEST from a farmers’ market. Make yummy Breakfast Apricot Crisp. After placing torn apricot meat tossed with sugar/flour/grated fresh nutmeg (1 nutmeg will last for years – it’s so pungent, very little is used at a time; if no nutmeg grater, use a microplane zester – watch fingers) in a small baking dish, sprinkle mixture of oats/flour (sub white ww okay)/sugar (or alt sweetener)/salt/sliced almonds/melted butter over apricots and bake. Since there’s not much sweetener, this dish is great refrigerated (flavors come together) and served for breakfast with a scoop of plain yogurt. If you want a dessert, increase sweetener to taste. Comments say add other dried/fresh fruit (cherries, peaches, apple, blueberries, plums), splash of molasses, alt nuts, pinch powdered ginger or cinnamon, sub butter with coconut oil, drizzle of honey at serving. Recipe can be doubled or tripled but increase the length and width of the baking pan, not the depth. Parental supervision. http://smittenkitchen.com/blog/2008/06/breakfast-apricot-crisp/
