Turn a “project” into lunch Here’s a concept with infinite variations. Prep whatever vegetables your kids will eat (thinly sliced raw colorful bell peppers, carrots, sweet onion, snow peas, celery, jicama, zucchini, bean sprouts, cucumber, cabbage, avocado, tomato; chopped parsley, cilantro, basil, mint, etc.), and set out on individual (paper?) plates along with optional thinly sliced charcuterie/deli meats and any kind of leftovers that would be good cold. Prep dry rice paper sheets (soak for 30 sec, place on clean cloth). Let the kids put what they want in the center of the sheets, and fold/tuck/roll.
