Your Jr. Chef can make Pasta with Roasted Chicken, Raisins, Pine Nuts and Parsley


A hearty dinner for 4 – 6 with few dishes to clean. Equipment: small heatproof bowl, roasting pan, cutting board, large pot, knife. Plump raisins, and roast bone-in, skin-on thighs/drumsticks seasoned with s&p/finely chopped rosemary/smoked paprika. Cool chicken, remove/discard bones, cut meat/skin into bite-sized pieces and return to roasting pan with drained raisins/toasted pine nuts. Heat roasting pan, add drained al dente linguine or spaghetti (comment says fusilli/rotini/farfale better to hold pan juices), and toss gently for 2 minutes. Take off heat, mix with lemon juice/fresh ground pepper, sprinkle coarsely chopped parsley, and serve. Parental supervision.
