Your Jr. Chef can bake Peanut Butter-Honey Banana Bread Here’s what to do with those freckled bananas on the counter… make this cousin to the peanut butter-banana sandwich. After mixing dry ingredients then wet (starting with creaming butter/sugars), alternate mixing in flour mixture and milk. Bake batter in loaf pan, and turn out bread onto rack to cool OR enjoy warm with honey butter. Notes: make ‘fine salt’ by pulsing in your clean electric coffee grinder for a few seconds (‘fine’ needed for distributing throughout batter), 2% milk okay, okay to sub 3/4 cup ww flour (quickbread will be denser), okay to use alt sweetener for granulated sugar. Consider baking batter as muffins (shorten cooking time by about 15 or so minutes – use toothpick in center of muffin coming out clean as visual clue to enough baking time).
