Pretty straight forward. Requires mixer with dough hook, rolling pin and counter space (or table surface or extra cutting boards for rising). Mix bubbly yeast/water with flours/salt. Divide dough into 8 balls (med. pita), roll 1/4″ thick, let rest and bake. Watch them puff in the first 5 minutes!  Use as a sandwich with lunch meat, leftover chicken (salad), pb&j, leftover roasted veggies; for dipping into hummus, spreading with tapenade; for dessert warmed and covered with honey/cinnamon/sugar; unlimited imaginative possibilities.
