Why shallots?


Shallots are used for dishes where you want a subtle, non-aggressive flavor (not sharp/overwhelming like onion) like in salad dressings, salads (raw), pan sauces, crisp-fried as garnish, shallot-butter. They keep well, and although will be more expensive than bulb onions, won’t be too pricey at ethnic markets. Buy loose at farmers’ markets or grow your own; each bulb planted is purported to produce at least 5 bulbs. From the market, try storing them in a lidded glass jar out of the sun. Also they’re a good source of antioxidant flavonoids, potassium, vitamin A and folate.


Couscous with Lemon and Herbs. After sautéing minced shallots, add minced garlic/chicken broth/grated lemon zest, and bring to a boil. Stir in plain couscous (ww okay), let stand for 5 min, fold in minced fresh basil or parsley or cilantro, lemon juice, s&p.
